1 PACKAGE Double 8 Cattle Company Fullblood Wagyu Beef for Stewing ( cut into 1/2 inch cubes )
3 tbsp. Grapeseed Oil
Kosher Salt ( to season )
Freshly Ground Black Pepper ( to season )
1 Yellow Onion ( medium diced )
1 Red Onion ( medium diced )
1 Red Bell Pepper ( medium diced )
3 Yukon Gold Potatoes ( medium diced )
7 Garlic Cloves ( minced )
24 oz. Diced Tomatoes
1/3 cup Tomato Paste
3 tbsp. Aji Mirasol ( Peruvian hot pepper paste )
6 cups Beef Stock
1 cup Red Wine
3 tbsp. Red Wine Vinegar
1/2 cup Evaporated Milk
1 PACKAGE Fideo Noodles
1 BUNCH Cilantro ( minced )
