This Easy Pickled Cabbage is crunchy, tangy, sweet, and seriously addicting. It's easy to make and ready to eat in about 12 hours.

1 small cabbage
2 medium carrots
1 medium bell pepper
2 cups water
7 tbsp. sugar
1 tbsp. salt
6 tbsp. vinegar
1/3 cup olive oil
