These spicy pickled vegetables go great with all of your favorite Mexican meals!

6 carrots ( whole )
2 jalapenos ( sliced )
1 white onion ( quartered )
9 garlic cloves ( peeled )
2 tbs olive oil
1 tsp black peppercorns
1/2 tsp dried oregan ( mexican )
2 bay leaves
2 cups apple cider vinegar
2 cups water
salt ( to taste )
