Pimiento Spread

When I first left Pennsylvania and relocated south of the Mason-Dixon line, I knew nothing of this “Southern caviar” more commonly referred to as pimiento spread (or “pimento,” if you prefer that spelling for this little red pepper). It’s used as a spread on crackers or as a sandwich filling, and is quite often offered on catering platters as finger sandwiches.

1 lb. Sharp cheddar cheese, cubed
1/2 lb. Monterey Jack cheese, cubed
7 oz. jar Mario diced pimientos
1/2 medium dill pickle, diced
1/2 glove of garlic, finely chopped
3 tbsp. mayonnaise
Place all prepped ingredients except pimientos into blender or food processor; "pulse" long enough to roughly mix, but not puree. Combine in bowl with pimientos and mayonnaise and mix well. Refrigerate for...
