Pineapple Fried Rice

1/2 lb raw shrimp (peeled, deveined)


3 Tbsp butter


2 tsp curry powder


1/2 tsp turmeric (a little goes a long way!)


3 cloves garlic, finely chopped


1/2 a medium-sized onion, chopped


5 cups of cooked white rice


1 Tbsp fish sauce


1 Tbsp sugar


2 Tbsp soy sauce


1 cup fresh or canned pineapple chunks (fresh is best!)


Raisins (optional)


Whole cashews (optional)


Cilantro for garnish


Tomato wedges or slices for garnish
