Pineapple Jam Tarts

For the pineapple jam:


4 cups shredded pineapple


2 1/2 cups sugar


1 cinnamon stick


1 star anise


3 cloves


2 Tablespoons lemon juice


For the cookie:


4 cups all purpose flour


1 teaspoon salt


2 1/4 sticks of butter (250g total) - chilled


2 eggs


4 Tablespoons cold water
Combine shredded pineapple, sugar, cinnamon stick, star anise, cloves and lemon juice in a large saucepan and simmer over medium-low heat for 30 minutes, stirring constantly. Let the pineapple jam cool...
