One of my favorite things about March is eating all the fun green foods. Looking back, I’m not sure why the green eggs and ham served in our elementary cafeteria seemed delicious, because it probably wasn’t! Something about eating the festive food just makes it so much fun! This delicious 2 ingredient fruit dip is perfect for your St. Patrick’s Day party!

8 ounces Cool Whip
3.4 ounces instant pistachio pudding
Mix cool whip and pistachio pudding together in a bowl until well blended. Serve with fresh fruit for dipping.

2 tablespoons fresh mint

Peel the cucumbers and chop them into large pieces. Put these cucumbers, lemon juice, lemon zest, and mint in a blender. Blend for about 3 minutes or until the juice is smooth.
