The base is similar to that of a shortbread but it uses almond meal to really amp up the flavour and texture. to top the base, a little Black Doris plum jam and sliced fresh or tinned pears.

1 and 1/4 Cup Flour
1/2 Cup Caster Sugar
1/2 Cup Almond Meal
1 and 1/2 Tsp Baking Powder
170g Butter, softened
1 Egg, lightly beaten
2 Tbsp Water
1 Tin of pears, drained and dried or 1 and 1/2 fresh pears, dried
3/4 Cup Black Doris Plum Jam
1/2 Cup Caster Sugar
1/2 Cup Almond Meal
1 and 1/2 Tsp Baking Powder
170g Butter, softened
1 Egg, lightly beaten
2 Tbsp Water
1 Tin of pears, drained and dried or 1 and 1/2 fresh pears, dried
3/4 Cup Black Doris Plum Jam
Line a 9x13 pan with baking paper and preheat the oven to 180°C.
