Poached Turkey Breast & Easy Gravy is the perfect recipe for Christmas entertaining. Especially if you are short on time and oven space, the turkey will be on the table in 50 minutes. Poaching aids keeping the breast succulent and tender.

1 1.5 to 2 Kg Turkey breast fillet ( off the bone and skin on )
1 Tablespoon Olive oil
50 Grams Butter
Salt and Pepper ( to Season )
1 Large Leek ( white part only cut into 2cm slices or 1 inch )
3 Cups Chicken stock
1/2 Cup Dry Sherry
1 Bunch of Fresh Thyme
3 Cloves Garlic ( peeled and bruised )
2 Dried Bay Leaves
1/2 Teaspoon Black peppercorns
4 slices Lemon peel ( minimum pith )
Easy Gravy:
50 Grams Butter
1/4 Cup Plain Flour
1 L reserved poaching liquid
