This crunchy popcorn sweet potato is a goner the minute it’s in the bowl. The homemade barbecue sauce enhances its flavour, while garlic and ginger add spice.

Popcorn Sweet Potato:
150g Sweet Potatoes (peeled and diced)
4Tbsp Coconut Milk
1 Spring Onion (diced)
1 White Onion (peeled and diced)
1Tsp Garlic Puree
1Tsp Ginger Puree
1Tsp Chives
Salt & Pepper
Barbeque Sauce:
5Tbsp White Wine Vinegar
5Tbsp Honey
1Tbsp Olive Oil
1Tsp Soy Sauce
1Tsp Garlic Puree
1Tsp Tomato Paste
2Tsp Mustard Powder
1Tsp Smoked Paprika
1Tsp Chilli Powder
