Pork and seafood risotto with turmeric and long pepper

This vibrant pork and seafood risotto is an absolute must make fall dish, comforting and delicious.

350 g risotto rice
400 g pork loin cut into chunks
200 g prawns shrimps
500 ml vegetable stock heated up
100 ml double cream heavy cream
200 ml white wine
2 medium onions
3-4 cloves garlic crushed and chopped finely
2 squid tubes large (cut into rings)
1 tsp turmeric powder
1 tbsp ginger freshly grated
1/4 tsp long pepper powder
1 Red chili
1 tsp Hawaiian red salt or pink Himalayan
2 spring onions ( scallions )
1 handful parsley fresh

A delicious international curry dish adapted from Chef Daniel Louis' recipe from the Seychelles, which combines the sweetness of banana with the smokey flavours of eggplant.

2 small green bananas ( peeled and cut into 1/2 pieces about 150g )
1 small eggplant ( peeled and diced, about 150 g )
1 teaspoon salt
1 teaspoon turmeric powder
2 (½ tablespoons) curry powder
2 pieces cinnamon or cassia
1/4 teaspoon chili powder
1/2 inch piece of ginger ( roughly chopped )
4 cloves garlic ( roughly chopped )
1 small onion (about 2” diameter) ( finely chopped, about 4 tablespoons )
1 small tomato ( finely chopped )
1/2 cup water
2 green chillies ( halved )
1/2 teaspoon thyme
1 1/2 cups coconut milk
2 tablespoons corn, safflower ( or other non-flavoured vegetable oil )
