Pork Chops with Mushroom & Onion Dijon Sauce

Elegant, delicious and easy to make. This dish is perfect for a weeknight meal or an impressive dish for company.

4 boneless pork chops
¼ cup flour
1 teaspoon thyme
4 tablespoons extra virgin olive oil
4 cups mushrooms, sliced
1 cup red onion, sliced
2 tablespoons rosemary, chopped
1 tablespoon bold deli mustard
2 tablespoons Dijon mustard
½ cup white wine
2 tablespoons parsley, chopped
¼ cup chicken stock
¼ cup heavy cream
2 tablespoons margarine
