A flavorful Pork Loin roast glazed with a delicious honey mustard garlic sauce.

Pork Loin and Vegetables:
3 tablespoons brown sugar
1 teaspoon ground ginger
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon ground mustard
1/2 teaspoon thyme leaves
1/2 teaspoon marjoram
1/4 teaspoon ground cayenne pepper
1/4 teaspoon crushed red pepper
1 1/2 tablespoons vegetable oil
4 lbs pork loin
4 medium potatoes halved
4 large carrots peeled and cut in chunks
2 medium onions halved
Honey Mustard Garlic Glaze:
1 tablespoon butter
2 cloves garlic minced
1/4 cup pineapple or orange juice
3 tablespoons honey
1 1/2 tablespoons spicy brown mustard
3 tablespoons low sodium soy sauce
2 tablespoons ketchup
1 tablespoon cider vinegar
1 tablespoon fresh grated ginger (or 1 teaspoon dried ginger)
