These pot roast totchos (tater tot nachos) are the perfect way to use up leftover pot roast! They're also a great reason to make a pot roast. Make use of your Instant Pot or slow cooker and your air fryer if you have one with this easy recipe!

1 package tater tots
2 cups pot roast, shredded
16 oz. Velveeta, cubed
1 can Ro-tel, undrained
1/2 cup sour cream
1 avocado, diced
1/4 cup pickled or fresh jalapeno, diced
to taste toppings ( of your choice )
