4 pieces potatoes ( peeled, cooked, diced and large ) 1 cup carrots ( diced ) 1 cup peas 1 chicken breast ( cooked and shredded and large ) 2 apples ( peeled and diced ) 1/2 white onion ( diced ) 2 pieces lime ( juice ) 1/2 cup mayonnaise 1/2 cup sour cream or plain yogurt 3 tablespoon cilantro or parsley ( finely chopped ) salt and pepper ( to taste )
Simmer the chicken breast within 15-20 minutes until cooked. Drain it and shred. If you are using rotisserie chicken just remove the skin then shred it.
