Potato & Spinach Patties

A perfect way to change up your potatoes. These are crispy on the outside and pillowy soft on the inside. The flavors are outstanding and you will be happy that you tried them!

4 medium-sized potatoes, boiled, and quartered
¼ cup milk
1 tablespoon butter
1 tablespoon oil
1 onion, diced
3/4 bag baby spinach
3 garlic cloves, minced
1 cup shredded asiago cheese
2 tablespoons lemon juice
1 egg, lightly beaten
2 cups panko crumbs
¼ cup olive oil, for frying (add more as needed)
