1 Double 8 Cattle Company Fullblood Wagyu Top Round Roast
4 Garlic Cloves ( minced fine )
1 Yellow Onion ( julienned )
1 1/2 cups Beef Stock
2 tbsp. Soy Sauce
2 tbsp. Grapeseed Oil
2 Small Navel Oranges ( cut in half )
to taste Kosher Salt
to taste Freshly Ground Black Pepper
2 tbsp. All-Purpose Flour
1/4 cup Water
1/4 cup Heavy Whipping Cream
Whipped Yukon Gold Mashed Potatoes :
2 lbs. Yukon Gold Potatoes ( peeled and cut into 1/2 inch cubes )
1 cup Heavy Cream
2 oz. Salted Butter
to taste Kosher Salt
to taste Freshly Ground Black Pepper
