Chuck roast - 2 inches thick (can use 1 pound to 3 pounds)
4 cloves garlic, minced
2 small onions, sliced
1 cup unsalted homemade chicken stock
1 tablespoon light soy sauce
1 tablespoon fish sauce
1 tablespoon olive oil
1 pinch of dried rosemary
1 pinch of thyme
2 bay leaves
2 tablespoons red wine or balsamic vinegar to deglaze
Kosher salt and ground black pepper to taste
