Protein Packed Peanut Butter & Quinoa Bombs

I came up with a snack that I can easily make, easily store and will help me beat the afternoon slump and give me an energy boost before and after an hour or 2 of tennis. These Protein Packed Peanut Butter & Quinoa Bombs are just that! They are made with Jif peanut powder, puffed quinoa and coconut oil!

Combine all ingredients in a medium sized bowl. Mix well. Form into balls and place on a cookie sheet. Refrigerate 30 minutes
