These individual puff pastry tomato tarts perfect for serving during spring, summer, or fall. They are easy to put together, loaded with fresh flavors and crunch in every bite.

1 Puff pastry sheet
3 Heirloom tomatoes ( Various Sizes and Colors )
1 Egg
1/2 cup Parmesan, goat, or feta ( I used Goat and Parmesan Cheese )
1/2 teaspoon Salt
2 tablespoons Olive oil
1 Clove fresh garlic, minced
1 Red onion
1 teaspoon Fresh thyme
1 teaspoon Fresh Basil
  1. Slice tomatoes thinly and place on paper towel. Sprinkle with salt.
  2. Cut onions and cook in saucepan until caramelized.
