2 1/2 cups all purpose flour
2 cups sugar
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon ground flax + 3 tablespoons water (mix up first and set aside)
1 cup canned pumpkin – or go all out and go fresh – I honestly didn’t have the time
1/4 cup oil
2 cups finely chopped apples
