Pumpkin Butternut Pasta is a comforting, creamy fall pasta made from wonton wrappers. The chicken broth, parmesan and mushrooms give it a nice earthy spiced flavor. A must for a quiet evening at home!

Wonton Filling:
1 tablespoon butter
3 tablespoons minced shallots
½ cup butternut squash puree
½ cup pumpkin puree
½ teaspoon salt
¼ teaspoon freshly ground white pepper
½ teaspoon garlic powder
3 tablespoons heavy cream
3 tablespoons shredded Parmigiano-Reggiano Cheese
Pinch nutmeg
Mushrooms for sauce:
1½ ounces dried porcini mushrooms
1 cup warm water
Sauce:
2 tablespoons olive oil
½ cup chopped shallots
2 garlic cloves, minced
½ cup dry Marsala
½ cup dry white wine
1 teaspoon minced fresh rosemary
2 cups chicken stock or canned low-salt chicken broth
¼ cup heavy cream
1 tablespoon butter, room temperature
1 tablespoon all purpose flour
4 fresh sage leaves, stems removed, chopped
24 wonton wrappers
1 egg, beaten
¼ cup shaved Parmesan for the top, if desired
