Usually it's the boys and I that head into the kitchen — but this time Ryan got in on the action as well.

My father-in-law loves pumpkin cheesecake and pumpkin bars so I decided to combine two of his favorites into one easy recipe with these pumpkin cheesecake bars.

CRUST INGREDIENTS:
1 cup gingersnap crumbs
1 cup graham cracker crumbs
5 tablespoons unsalted butter ( melted )
1 tablespoon sugar
1/2 teaspoon cinnamon
FILLING INGREDIENTS:
1 package cream cheese ( at room temperature )
1 cup brown sugar
15 ounce can pumpkin puree
2 eggs ( room temperature )
12 ounce evaporated milk
1 1/2 teaspoons vanilla
1 teaspoon ground cinnamon
1 1/2 teaspoons pumpkin pie spice
1/4 teaspoon salt
TOPPING INGREDIENTS:
2 cups pecans ( finely chopped )
1/2 cup brown sugar ( packed )
3 tablespoons water
