Pumpkin Cinnamon Rolls (Freezer Meal)

These delicious cinnamon rolls are infused with all of the flavors you would expect to find in pumpkin pie, and covered in maple-flavored icing. They are well worth the extra effort it takes to create them from scratch! Finished rolls can be frozen unbaked, baked/unfrosted, or completely finished.

Dough
1 qt whole milk
1 cup vegetable oil
1 cup sugar
2 pkg active dry yeast
1 can pumpkin puree
8 cups + 1 cup all purpose flour + extra for rolling dough
1 tsp ground cinnamon
1/2 tsp freshly ground nutmeg
1/2 tsp ground ginger
1 scant teaspoon baking soda
1 heaping teaspoon baking powder
1 heaping teaspoon salt

Filling
1 1/2 sticks butter, melted
1 cup sugar
1 cup brown sugar
1 tsp ground cinnamon
1/2 tsp freshly ground nutmeg
1/2 tsp ground ginger
3 cups chopped pecans (reserve some for sprinkling on top)

Frosting
16 oz whipped cream cheese
1 1/2 lbs powdered sugar
1/2 cup whole milk
2 Tbsp butter, melted (+ extra for baking pans)
dash of salt
maple flavoring, to taste
