2/3 cup coconut oil ( melted )
2 2/3 cups sugar
4 eggs
1 can (16 oz) pumpkin
1 1/2 cups shredded coconut ( divided )
2/3 cup water
3 1/3 cups all purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1/2 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon cloves
3/4 cup walnuts or pecans ( coarsely chopped )
Glaze:
2 cups powdered sugar
1/2 tsp vanilla

Heat oven to 350 degrees F. Spray or grease 2, 9 x 5-inch loaf pans.
Mix coconut oil and sugar in large bowl.
Add eggs, pumpkin, and water; mix well.
