Pumpkin Crumb Muffins made with pumpkin puree, basic baking ingredients, a simple crumb topping and a delicious maple drizzle.

2 eggs
1/4 cup milk
1 3/4 cups flour
1 teaspoon baking soda
2 teaspoon cinnamon
1 teaspoon pumpkin pie spice
1/2 teaspoon salt
1/2 cup vegetable oil
1/2 cup granulated sugar
1 1/2 cups pumpkin puree
Crumb Topping
3/4 cup flour
1/4 cup brown sugar
1 teaspoon pumpkin spice
6 tablespoons unsalted butter, cold
Maple Icing
3/4 cup confectioners sugar
1 tablespoon maple syrup
1 tablespoon milk

These Peach Cobbler Crumb Muffins are soft, crumbly and full of sweet peaches.

1 stick butter, melted
1/2 cup sugar
1/2 cup flour
1/2 cup brown sugar
1/2 cup quick oats
2 cups flour
1 tsp. baking soda
1 tsp. baking powder
15 oz. can sliced peaches, cut into quarters and reserving 1 Tbl. of the juice
3 tablespoons butter, melted
1/4 cup sugar
1/4 cup brown sugar
2 eggs, beaten
2 tsp. cinnamon
1 tsp. vanilla
1/2 cup milk
1 tablespoon peach juice
1 cup powdered sugar
1/2 tsp. lemon extract or lemon juice

These Spanish Almond Muffins with Caramelized Sugar really rock my world. They have an incredible flavor and texture, they´re beyond easy to make and the best part, they´re not overly sweet. These muffins are perfect for breakfast or as an afternoon snack next to a cup of tea.
