Pumpkin Curry Soup
An easy, delcious, creamy pumpkin curry soup that is perfect for the holiday seasoning.
3 tablespoons unsalted butter
1/2 teaspoon curry powder
2 cups canned pumpkin
1 1/2 teaspoons salt
1 1/2 cups heavy cream
2 1/2 cups chicken stock
to taste toasted pepitas ( for garnish )
to taste fresh thyme ( for garnish )
In a medium size stock pot, add the butter and heat over medium heat. When melted, add the sliced onions and sauté, stirring occasionally, until tender and fragrant, about 10 minutes.
