This Pumpkin Risotto is a delicious comfort food for when you need something cozy and delicious to eat on winter evenings.

250 grams butternut squash ( cubed )
200 grams arborio rice
1 small onion
2 cloves of garlic
600 ml chicken broth
to taste salt and pepper
30 grams freshly grated parmesan cheese
1 teaspoon olive oil
