A Pumpkin Roll is a thin, moist pumpkin cake with or without walnuts, filled with a creamy frosting mixture and wrapped into a swirl of sweet heaven!

Cake:
3/4 cup all-purpose or cake flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground Saigon cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon Kosher salt
3 large eggs
1 cup granulated white sugar
2/3 cup pumpkin puree
1 cup chopped walnuts or pecans ( optional )
confectioner's sugar ( for dusting )
Filling:
8 ounces cream cheese
1 cup confectioner's sugar
6 tablespoons unsalted butter
1 teaspoon pure vanilla extract

This crispy fried chicken sandwich recipe is better than Chik-Fil-A, Popeye's or McDonald's! The chicken breast is brined in pickle juice, breaded with flavorful seasonings, fried until golden brown, and then piled on a toasted brioche bun with lettuce, tomato, pickles and mayonnaise. Serve the sandwich with a side of waffle fries and homemade Chik-Fil-A sauce for dipping!

4 chicken cutlets
1/2 c milk
1/2 c dill pickle juice
2 c all purpose flour
2 T confectioners sugar
2 t baking powder
2 t paprika
2 t kosher salt
1/2 t black pepper
1/2 t garlic powder
1/4 t onion powder
1 egg
oil ( for frying )
4 sandwich buns ( buttered and griddled )
