Here is a recipe for a Quick and Easy Pizza with Manchego, Roasted Peppers & Spanish Olives that is done in just about 15 minutes. I used pita breads as the pizza base, making this pizza super fast and easy to make.

2 pita breads
1 can tomato puree
1 cup shredded Mozzarella
1 cup shredded Manchego cheese
pinch hot smoked paprika
pinch dried parsley
1/2 red onion thinly sliced
3 roasted red peppers
10 black Spanish olives
1 tbsp. extra virgin Spanish olive oil
pinch sea salt
pinch black pepper
handful fresh chives
