Quinoa Chili
1 tablespoon olive oil
1 yellow onion, finely diced
4 cloves garlic, minced
1 can (28 oz) petite diced tomatoes
1 can (15 oz) tomato sauce
2 cups cooked quinoa
1 can (14.5 oz) chicken or vegetable broth
1 can (4 oz) diced green chiles
2 cans (15 oz each) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 1/2 cups frozen corn
1-2 tablespoons chili powder, depending on spice preference
2 teaspoons ground cumin
2 teaspoons cocoa powder
1 teaspoon paprika
1/2 teaspoon granulated sugar
1/2 teaspoon ground coriander
Salt and freshly ground black pepper, to taste
garnish: sour cream, shredded cheese, cilantro, corn chips, avocado

Heat olive oil in a large enameled cast iron pot or a soup pot over medium-high heat. Once oil is hot add onion and saute until translucent, about 4 minutes. Add garlic and saute 1 minute longer.
