For the salad:

1/4 cup yellow bell pepper ( diced )

1/4 cup minced red onion
1/2 cup crumbled feta cheese
2 tbsp chopped parsley ( plus more for garnish )
1 cup chickpeas ( drained and rinsed )
1 cup sliced kalamata olives
For the dressing:
1/4 cup olive oil
1 tsp dijon mustard
2 tbsp red wine vinegar
1 tbsp lemon juice
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp dried oregano
pinch salt and pepper ( to taste )
