This is the yummiest quinoa salad! The ingredients in this dish are so fresh and healthy including tomatos, avocados, limes and black beans.

Ingredients:
1 cup quinoa
2 cups water
1/4 cup olive oil
Juice of 2 fresh limes
3/4 tsp cumin
Pinch of red pepper flakes
1 can black beans, drained and rinsed
1-1/2 cup cherry tomatoes, halved
5 green onions, finely chopped
1/4 cup cilantro, finely chopped
1 large avocado, chopped
Salt and pepper to taste
