3/4 cup quinoa
1.25 cups vegetable stock
2 small heads broccoli florets, chopped into bite size pieces
6 medium mushrooms, sliced
1 pint grape tomatoes, halved
1 tbsp olive oil
1 tsp minced garlic
1/2 tsp salt
1/4 tsp pepper
3 oz feta
