Raspberry Pie Bars include a layer of homemade raspberry pie filling with whipped cream cheese and a shortbread crust . They're AMAZING!

Shortbread Crust:
2 Cups Flour
1 cup butter, cold, diced
½ cup brown sugar
½ cup pecans
Whipped Cream Cheese Layer:
1 (8oz) block cream cheese, room temperature
1 cup powdered sugar
1 tsp vanilla
2/3 cup heavy cream
Raspberry Pie Layer:
2 Tbsp granulated sugar
3 tsp cornstarch
2/3 cup cold water
3 heaping cups fresh or frozen raspberries

1/2 cup + 2 Tbsp granulated sugar
2 Tbsp butter
2 1/2 Tbsp cornstarch + 1/4 cup water
1 large egg, yolks and whites separated
½ tsp red gel food coloring
