Spinach & Artichoke Dip Chicken Casserole

If you like spinach & artichoke dip, you'll love this simple chicken casserole. Plus, it's lightened up, but you'd never know it.

1.5 lb boneless skinless chicken breasts, sliced in half
1 Tablespoon unsalted butter
1/2 of an onion, chopped
1 teaspoon minced garlic (2 cloves)
salt & pepper, to taste
6 oz. neufchatel cheese (low fat cream cheese), softened
6 oz. nonfat plain Greek yogurt (I use Fage)
10 oz. chopped frozen spinach, thawed & drained
12 oz. quartered artichoke hearts, drained & coarsely chopped
1/2 cup parmesan cheese
1/2 cup shredded cheddar cheese
