Red Curry w/ Mandarin Oranges & Tofu (Vegan, Vegetarian, Gluten Free)

Curry is one of my favorite things in the world, especially when combined with coconut milk. I love the sweet-spicy flavors of this recipe! I use Trader Joe's Thai Red Curry sauce but I know there are many others out there just as delicious.

2 1/2 tablespoons vegetable oil, divided
1 small sweet onion, chopped
3 cloves garlic, minced
1 medium red bell pepper, chopped
14-ounce can light coconut milk
11 ounce jar red curry sauce (I use Trader Joe’s Thai Red Curry Sauce)
1 cup shredded carrots
1 cup jasmine rice
1 1/2 cup. water
1/4 cup shredded, sweetened coconut
15 ounce container extra firm tofu, diced
2 11-ounce jars mandarin oranges, cut into smaller pieces
