A sweet and rich red onion marmalade with a hint of mustard which is easy to make and will keep for months. It makes a beautiful accompaniment to cheese dishes and platters

500 g Red Onion
1 tbsp Olive Oil
100 g Caster Sugar
75 ml Balsamic Vinegar
75 ml Red Wine Vinegar
2 cloves Garlic
15 g Dijon Mustard
