Red Thai Curry

Thai curry is a great and very different change form yellow curry. Give it a try, it has just a little kick.

2 tsp canola oil
1-2 clove garlic, minced
1 cup each red bell peppers, onion, carrots, cut into julienne strips
1 tbsp grated fresh ginger
1 tbsp red curry paste
1 pound boneless, skinless chicken breasts, cut into large bite sized pieces
1 cup chicken broth
1 cup lite coconut milk
1 tbsp soy sauce
1 tsp light brown sugar
1 1/2 cups cauliflower florets
2 cups baby spinach coarsely chopped
1 tbsp fresh lime juice
2 tbsp fresh basil
