Red Velvet Brownies

These brownies are soft, moist, & perfectly red velvet with that hint of chocolate.

3 Tbsp unsweetened cocoa powder
1 oz red food coloring (or scant 2 Tbsp)
2 tsp vanilla, divided
1/2 cup (8 Tbsp or 1 stick) unsalted butter; room temperature
1 1/2 cups sugar
2 large eggs; room temperature
1 1/4 cups all-purpose flour
1/4 tsp salt
Frosting:
4 oz neufchatel cream cheese
1/4 cup (4 Tbsp or 1/2 stick) unsalted butter
1/2 tsp vanilla
1 cup powdered sugar
