Ricotta Cappuccino

A coffee flavored dessert that uses up leftover ricotta.

1 cup part skim ricotta cheese
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 teaspoon espresso powder
1/2 teaspoon cocoa powder
1/4 teaspoon ground cinnamon
Place all ingredients in a food processor and process for about 1 minute. Scrap down the sides and process for 1 more minute. Pour mixture into two serving containers, cover and refrigerate for at least 1 hour.
