Ricotta Pancakes with Berry Coulis Whipped Cream

Pancakes topped with a delicious berry whipped cream.

1 cup fresh or frozen berries
1/4 cup granulated sugar
1 tablespoon fresh lemon juice
1 cup heavy whipping cream

Pancakes
1 1/2 cups all purpose flour
1/2 cup cornmeal
2 tablespoons granulated sugar
1 teaspoon baking powder
2 eggs
1 1/4 cups milk
1/2 cup part skim milk ricotta cheese
2 tablespoons unsalted butter, melted and slightly cooled
1 tablespoon honey
1 teaspoon vanilla extract
lemon zest from 1/2 of a lemon
In a small pan, over medium low heat, combine the berries and sugar. Bring mixture to a simmer and cook for 10 minutes, stirring occasionally. Transfer mixture to a food processor or blender and puree....
