A simple and delicious Roasted Butternut squash Romesco Sauce is a great vegetarian and gluten-free meal option.

1 lb. bag diced butternut squash (about 2 cups)
1 tablespoon olive oil
1/2 tsp. salt
1/4 tsp. pepper
3 plum tomatoes, cut into chunks
1 pinch red pepper flakes
3-4 garlic cloves
2 tablespoons unsalted almonds (if salted, do not add in the salt)
1 tablespoon fresh or dried basil
1/2 tsp. salt
1/2 tsp. pepper
1 tablespoon red wine vinegar
3 tablespoons olive oil
