Roasted Cauliflower, Potato, Corn, Chicken Soup 'Chopped'

This soup gets it's thickness from pureed cauliflower and potato. No dairy at all. It's thick and rich like a chowder, but chopped of calories! It does have a bit of Bacon in it to give it a smoky layer of flavor.

Soup Pot Ingredients:
3 strips of Bacon
1 teaspoon Olive Oil
1 Onion, Chopped. I used Red but you could use a Brown or White Onion
1/14 cups Corn. I used frozen and didn’t even have to defrost it.
2 cups Chopped Mushrooms
2 cups Chopped cooked Chicken. See “Easiest Ever Roasted Chicken”
3 cups Roasted Cauliflower
1 cup Roasted Red Potatoes
4 cups Chicken Stock, canned, boxed or Homemade Stock in a Crock
1 teaspoon Montreal Seasoning. This is steak seasoning blend readily available at most markets.
Kosher or Sea Salt to taste
Freshly Ground Black Pepper to taste
