Roasted peaches are incorporated into muffins and then topped with a cinnamon streusel.

3 peaches
3 cups all purpose flour
4 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon baking soda
3/4 cup granulated sugar
1 1/3 cups plain Greek yogurt
5 tablespoon unsalted butter ( melted )
2 eggs
1 teaspoon vanilla extract
1/3 cup milk
1/3 cup granulated sugar
2 1/2 tablespoons granulated sugar
1/4 cup brown sugar
2 tablespoon brown sugar
1/4 cup walnuts ( chopped )
2 tablespoon walnuts ( chopped )
4 1/2 tablespoons all purpose flour
1/2 teaspoon ground cinnamon
3 tablespoons unsalted butter ( melted )
  1. Preheat the oven to 350º F. Place the diced peaches in a small baking dish and roast for 30 minutes.
