1.5 lb. russet potatoes, washed and cut into 1-inch cubes
3 garlic cloves, minced
2 tablespoons thyme, chopped
2 tablespoons rosemary, chopped
2 tablespoons oregano, chopped
2 tablespoons parsley, chopped
1/4 cup olive oil
salt & pepper
