Roasted Red Pepper Harissa 'Hummus'

A simple and healthy dip that is a perfect snack or party appetizer!

1 can cannelini beans {or white kidney beans}
1 300mL jar of roasted red peppers, drained
3 tbsp olive oil
1 tbsp lemon juice
1 clove garlic
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp salt
2 tsp harissa paste *see note
Combine all ingredients in a food processor. Blend for one minute, until smooth and creamy. Serve with veggies or crackers.
