Roasted Spanish Potatoes with Spinach Pesto

For those of you that know me, you know I´m a sucker for potatoes. These roasted Spanish potatoes with spinach pesto are no exception. Loaded with so many flavors, easy to make and done in under 30 minutes. Get your taste buds ready for the ride of a lifetime.

FOR THE POTATOES::
2 medium sized yukon gold potatoes
1 tbsp extra virgin Spanish olive oil
1 tsp sweet smoked Spanish paprika
pinch sea salt
pinch black pepper
FOR THE SPINACH PESTO::
1 tbsp blanched almonds
1 tbsp pine nuts
2 cups fresh spinach
10 fresh basil leaves
1 clove garlic
1/4 cup mild manchego cheese
2 tbsp extra virgin Spanish olive oil
pinch sea salt
pinch black pepper
