Roasted Sweet Potato and Pecan Salad with Sweet Orange Dressing

This salad has the best flavors! The roasted sweet potatoes go perfectly with the sweet orange dressing.

4-6 small sweet potatoes, peeled and cubed
olive oil for drizzling
salt and black pepper to taste
1 cup pecan halves
2 medium oranges
2 tablespoons balsamic vinegar or white balsamic vinegar
2 tablespoons honey
2 tablespoons dijon mustard
1 clove garlic, peeled
¾ teaspoon salt
¾ teaspoon black pepper
¾ cup olive oil
10 to 12 ounces pre-washed spring mix (or baby spinach)
