Roasted Sweet Potato & Feta Salad with Tahini Sauce

A simple, healthy & filling salad with roasted sweet potatoes, feta cheese and arugula - all topped with a delicious lemon-tahini dressing.

2 Tbsp olive oil
800 g sweet potatoes ( cut in cubes )
1 tsp salt
1 tsp ground black pepper
150 g arugula
150 g feta cheese ( crumbled )
4 Tbsp tahini
1 Tbsp olive oil
1 lemon ( juice of )
1 tsp salt
6 Tbsp water
4 tsp sunflower seeds
4 tsp pumpkin seeds

Set the oven for 225 C/430 F.

Place the sweet potato cubes on a large oven tray and mix with 1Tbsp olive oil, 1 tsp salt and black pepper. Place in the middle of the oven and roast for 15 minutes....
